Place the cutting board at a comfortable height. Install the two rods in the holes indicated by the stage 1 arrow, the rods will fit firmly. This is called the thinning process. Place the blade an inch or more below the top end of one of the rods. Hold the blade straight up and down as though slicing. Slice down the rod, drawing the blade toward you. Avoid slicing too fast or recklessly or slip off the rod.
Now, go to the other rod and do the same thing.
Continue alternating from rod to rod. 25 strokes may be sufficient. After the thinning process is complete, take the rods out and install them in the other set of holes indicated by the stage 2 arrow for the sharpening process. Repeat the same slicing motion as before.
This will produce an incredibly sharp, strong edge. The dark lines on the rod are the metal that you removed from your edge. Rotate the rods when they get black exposing unused areas. When they get black all around, they must be scrubbed with kitchen cleanser.
The rods will not wear with sharpening or scrubbing. They are tough and strong but they are ceramic with high aluminum oxide abrasive. They can break if dropped flat on a hard surface.
